Chef Paolo Basile started his career in 1990 juggling between kitchens and school. His first mentors taught him to respect customers and raw materials. One of his main qualities is the natural ability to guide and orchestrate the kitchen brigade even in the most hectic moments, conveying self-confidence, calmness and composure.
Paolo Basile favours Sicilian cuisine, revisited and presented with flair. After spending years working in hotels and restaurants all over Italy, he crossed the border exporting his cuisine in Europe. He found his true call in Belgium first and later in the Netherlands where he still lives and works as an executive chef for a company that owns several restaurants, among other La Liguria Restaurant in Den Haag.
